Feel free to get creative with your poke bowl and consider some of these additional ingredients and swaps!

Swap the protein:Add sashimi grade tuna, hot smoked or poached salmon cubes or stir-fried prawns to your rice bowls.

Add any veggies you have in the fridge: Green beans, mange tout, chili pepper, and julienned carrots will work great in this rice and smoked salmon bowl.

Alternative dressing:Fancy a spicy mayo drizzled all over your poke bowl? Ingredients

For The Dressing:

  • 1 lime juice only
  • 1 tablespoon soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar

For Poke Bowls:

  • 120 g (0.65 cups) long-grain rice
  • ½ ripe mango cut into chunks
  • 60 g (0.41 cups) edamame beans cooked
  • 70 g () cucumber sliced into matchsticks
  • ¼ bell pepper thinly sliced
  • 2 spring onions thinly sliced into matchsticks
  • 100 g (3.53 oz) smoked salmon
  • 1 teaspoon sesame seeds toasted

Instructions

  • Cook rice following the packet instructions.

  • Make the dressing by placing the lime juice, sesame oil, rice vinegar, soy sauce and a pinch of salt and pepper in a jar, and shaking it vigorously for 30 seconds.

  • Once cookedm drain the rice and divide it between two bowls. Top the rice with all the vegetables and arrange pieces of smoked salmon on top.

  • Drizzle the dressing all over, scatter the tip with sesame seeds and serve!
