The Grinder salad sandwich went viral on TikTok, and so obviously, I had to make a vegan grinder sandwich recipe for you all!

What is a grinder sandwich?

It’s basically a thick hard crusty bread roll, filled with your favourite protein and cheese and a creamy iceberg salad (the grinder salad).

This recipe for a vegan grinder sandwich is a super quick 5 mins recipe! It’s delicious and messy (as it’s supposed to be)!

Recipe for Vegan Grinder Sandwich

Traditionally, this grinder sandwich contains a mixture of meat, melted cheese, and a creamy and tangy iceberg salad. For this vegan recipe, I used vegan deli meats, vegan cheese slices and a vegan grinder salad.

Some of the non-vegan grinder sandwich recipes are time-consuming and take a lot of effort – so I made it easier for those who “don’t have time for that” or are lazy like me (hence my blog name lol).

Why is it called Grinder Sandwich?

The origin of the name of grinder sandwich is still debated but many people say it is due to the fact that your jaw has to work extra hard to eat this gigantic sub (as in you’ll have to “grind” your teeth).

Ingredients

  • Hoagie Buns or Large Panini buns
  • Vegan Butter (optional)
  • Garlic powder
  • Meatless Deli Meats (Vegan ham, bologna, turkey, etc)
  • Vegan Cheese slices
  • Tomato

    Grinder Salad:

  • Iceberg Lettuce
  • Red Onion
  • Pepperoncini peppers / Hot Peppers
  • Dijon Mustard
  • Vegan Mayo
  • Red Wine Vinegar / Apple Cider Vinegar
  • Garlic Powder
  • Italian Seasoning

This recipe is meat-free and nut-free.

To make the recipe gluten-free, simply use gluten-free bread.

How To Make Grinder Sandwich (Vegan)

1. Start by preparing the grinder sandwich bread first, smearing vegan butter and sprinkling garlic powder onto the inside of the bread (add as much as you’d like). Now toast your bread! The fast method would be to place in an air fryer at 370 degrees F for around 3-4 minutes (or to your liking) to toast slightly while preparing the rest of the ingredients. Alternatively, you can use a preheated oven at 400 degrees F for around 3-4 minutes. Or just skip the toasting process if you don’t want toasted bread.

2. While you wait for your toasted bread, prepare the “grinder salad” by mixing together all the salad ingredients in a large mixing bowl. Add salt and pepper to taste.

3. Remove bread from the air fryer and add slices of cheese and vegan deli meat (I used vegan bologna and turkey but you can use whatever you’d like). If desired, you can also use smoked tofu slices, vegan bacon and/or tempeh. Place the bread with the cheese and meat back into the air fryer at 350 degrees F for around 2-3 minutes to melt the cheese (if using oven, use 375 degrees for around 2-3 minutes).

5. Continue to make your grinder salad until sandwich is done toasting. Remove the bread from the air fryer or oven, add the grinder salad, close up the sandwich and enjoy right away! I highly recommend eating this immediately after making it, because the sandwich will get soggy if left to sit.

  • 2 tbsp red wine vinegar or apple cider vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp italian seasoning
  • 1 tbsp garlic powder
  • 1 tsp red pepper flakes optional, if you like more spicy
